UFC referees will end a fight once one of the opponents is no longer able to defend themselves or is considered to be in a vulnerable state. This is done as a measure of safety for the fighter, so that he or she does not suffer any further harm or injuries. This decision is ultimately up to the referee’s discretion, with the referee having the final say in whether or not the fight should continue.
